I don't know how the good people at Shin do it but you would think their udon would be a heavy meal. But it was light and refreshing even on the sweltering day I chose to visit. The tempura has to be some of the best I have ever had also. Want to get back and try their hot bowls of udon next time I am in town. Get here ...
