I was excited to get to Taiwan because its culture fully embraces soup as one of its signature dishes. Beef noodle from Yong Kang was a bowl filled with a firm noodle, tender pieces of beef and a super beefy, slightly spicy, umami broth. I would have stayed for seconds but I had to make sure I saved room for dessert down the street at the Tianjin Flaky Scallion Pancake corner street stall.
